How a class works

Aprons on at ten. Lunch at one.

Every course runs the same way, from a one-evening knife class to a two-day bread weekend.
01
Coffee and the plan
Your teacher shows the whole dish from start to finish, and how the day is split.
02
Your own station
Every cook has a station, a board and a set of knives. Eight of you at most.
03
Cook it twice
Once beside the teacher, once on your own — the second time is the one you remember.
04
Sit down and eat
Everyone eats what they made at the long table, and goes home with the recipes.

From the long table

What students took home.

I'd been buying sourdough for years. Now I bake two loaves every Sunday, and they're better.
Rachel Moss
Sourdough weekend
Tom made me cut an onion about forty times. I've never been quicker in my own kitchen.
Daniel Afolabi
Knife skills evening
We booked the family class for our daughter's birthday. She still talks about the pizza.
Sofia Marchetti
Saturday family kitchen
Small enough that the teacher actually watches you. That's what I was paying for.
Ian Calloway
Fresh pasta day
My fridge is now mostly jars. I regret nothing.
Mei Tanaka
